THANKSGIVING FAMILY HUSTLE/ “PINK FRIDAY” SHOPPING.(thanks to Nicki Minaj for that logo) I see you girl.

Your sitting around the family dinner table, sippin on that glass of Chardonnay, as Aunt Lucille waltz’s in wearing that festive turkey sweater vest and a turtleneck, carrying in her famous cranberry sauce, as she shows off her new “stateboard haircut” which she volunteered to be a model for her daughter’s haircutting experiment. Yikes! So excited to tell everyone about her husband Ted’s new tie he got for the Holiday’s, as he is usually found sitting quietly in the corner avoiding all the chaos, guzzling down his Jack on the rock’s listening to the Christmas music. While all the other’s are chatting it up about decorating that tree and pulling an all nighter, as your waiting to snatch that deal from the local department store. Let me set the scene for ya.. huge obnoxious tents NOT nailed  down properly, mind you. Ya’ll remember those Fisher Price kid tents that opened up with the push of a button, type of deal. Yeeeep that’s it. (boy they took the word adventure out of that one).  Kinda like those pop up campers, one button on that too, and all of a sudden you have a huge canopy in the middle of a corn field, with a kitchen in it the size of a pea. Actually I think it may just even be sink in the middle. Anyhow, getting of topic. Ok I’m back again, as they all camp out until the store opens, they run over eachother trying to get that pair of socks on sale or something that’s not even worth getting in a fight for. As Mom’s walk in, in their pj’s and crying kid’s in the cart because it is way past their bedtime. Yes, the Holiday’s are here! With that, I have a recipe that I make for Thanksgiving that is super budget friendly and super easy to make.  IMG_0933 (2)

Pumpkin cake:

1 can pumpkin puree (regular size can)

1 box yellow cake mix (no need to add any eggs or oil)

1 teaspoon vanilla extract

*mix both together with mixer and spread in a greased 13 by 9″ pan, and bake at 350 degrees for about 20-25  mins or so.( I’d check it after 20 and see where your at.) After cooled, frost and dust with pumpkin pie spice. Cut into squares, and what I usually do to make it look nice is put each piece into jumbo size white cupcake wrappers. Place on a fancy serving tray. As for the frosting, you can always do a canned cream cheese one for a short cut, or if you want to home make it…

Fluffy cream cheese frosting:

1 cup sugar

1 pinch salt

1 tsp. vanilla

1 1/2 cups heavy whipping cream

1 (8oz) cream cheese block

  • In a bowl whip 1 1/2 cups whipping cream until stiff peaks form. In another bowl beat together cream cheese with sugar, salt and vanilla until smooth. Using spatula fold in whipped cream into cream cheese mixture, you can even add a pinch of your favorite spice to the frosting if you desire or just garnish with it.
